Julienning
I have figured out the secret for easy julienning without spending big bucks for a mandolin. (First of all, as a banjo player, I could never bring myself to pick up a mandolin…. oh wait, wrong kind of mandolin.)
Kyocera makes these wonderful, inexpensive ceramic slicers. The one shown here is adjustable and can slice in four different thicknesses. (I don’t see it on Kyocera’s website, but if you call Heather at Plate It Up! she has them.)
I set it on its thickest setting (2mm) and sliced the carrots into nice 2mm thick ribbons. Then it was an easy task to use a knife and slice each ribbon lengthwise (stacking them 2 or three high makes the task go faster) in little strips.


Oh, I want one of those.
