I Broke Down and Bought an Instant Pot

For the longest time, I rejected the idea of buying an Instant Pot.  After all, my office is 15 feet from the kitchen so I did not feel the ‘time-saving’ factor had any value for me.  And then Summer came.  Last summer I started a campaign of minimizing the use of the oven during the summer. In this new house the kitchen is in the center and using the oven heats up the main living area.  I started making more use of the crock-pot during the summer.  It occurred to me that an Instant Pot would also help me reduce the use of my oven.

Instant Pot has about a zillion different models, but their Product Comparison Chart was very helpful for choosing the right one. (Beans/Chili: Yes; Cake: no; Sterilize: no; etc). I chose the Duo 6qt.

The first test was to make brown rice.  I’m very comfortable making rice on the stovetop but what the heck.  I was rewarding with perfect fluffy rice.  Then I steamed salmon filets: perfect again.

The acid test will happen in a couple days: I’m going to try to make my lasagna sauce in it that normally takes 2-3 hours on the stovetop.  We’ll see what happens.
