Brats are a subject unto them selves. There is such a huge variation if flavor from brand-to-brand and from one sausage maker to another. Some of them are a waste of sausage casing, while others are fit for a king. Personally I prefer the Bavarian Weisswurst, a white brat made with veal. The flaors are so much more subtle.
