Corn Sauce

I was introduced to this sauce by a French chef who is a genius when it comes to sauces.  Corn.  Who would think of using corn for a sauce?  Chef Pascal.

This sauce is great for fish, and when made with sweet corn has a subtle sweetness to it. I use it often when I’m service a mild neutral fish like Ono.
Ingredients
  • 4 ears of sweet corn
  • 1 leek
  • 1/2 an onion
  • 1 cup chicken stock
  • Salt and Pepper
Instructions
  1. Chop the onion
  2. Using just the white part of the leek, slice it crosswise into 1/4 inch wide slices
  3. Cut the kernels from the corn
  4. Under low medium heat, cook the onion and leek until sofy
  5. Add the corn and chicken stock
  6. Cook for 3-5 minutes.
  7. Add salt and pepper to taste
  8. Puree the sauce in a blender
  9. Serve
