Corn Sauce
I was introduced to this sauce by a French chef who is a genius when it comes to sauces. Corn. Who would think of using corn for a sauce? Chef Pascal.

This sauce is great for fish, and when made with sweet corn has a subtle sweetness to it. I use it often when I’m service a mild neutral fish like Ono.
Ingredients
- 4 ears of sweet corn
- 1 leek
- 1/2 an onion
- 1 cup chicken stock
- Salt and Pepper
Instructions
- Chop the onion
- Using just the white part of the leek, slice it crosswise into 1/4 inch wide slices
- Cut the kernels from the corn
- Under low medium heat, cook the onion and leek until sofy
- Add the corn and chicken stock
- Cook for 3-5 minutes.
- Add salt and pepper to taste
- Puree the sauce in a blender
- Serve
