Barley, Romaine Lettuce, and Scottish Salmon Salad
How about a wonderful delicacy that is also healthy? How about one that is also quick and easy to make? You can use commercial caesar dressing, or you can make your own (ingredients and instructions are in the recipe). We prefer to make our own Caesar dressing.
Most people boil their barley in water but I find that using chicken stock gives the barley some additional flavor.
BTW, I’ve tried several brands of Scottish salmon and the two best are:

Barley, Romaine Lettuce, and Scottish Salmon Salad

Ingredients
- 1 Cup Hulled or Pearl Barley
- 3 Cups chicken stock
- Romaine Lettuce
- Caesar Dressing
- 4oz Scottish salmon per serving
- if you prefer to make the Caesar Dressing:
- 1/2 Cup Mayonnaise
- 1 Anchovy fillet, finely chopped
- Pinch of salt
- 2 Tbsp lemon juice
- 3 Drops Worcestershire sauce
- 3 Tbsp extra virgin olive oil
- 1 Garlic clove, finely chopped
Instructions
Barley:
- Bring three cups of chicken stock and the barley to a boil, then reduce to a simmer.
- Let simmer for about 50 minutes
Casear Dressing:
- Whisk together the garlic, anchovy, and salt
- Whisk in the lemon juice and Worcestershire sauce
- Whisk in the mayonnaise until the mixture is thick
- Drizzle in the olive oil while vigorously whisking
- Toss with the romaine lettuce
Assembly:
- Place a row of barley on the plate.
- Place a row of the romaine lettuce next to the barley
- Place a row of the salmon next to the lettuce
- Serve
