Zero to Fresh Homemade Pasta in 11 Minutes

In this video I show you a way to make fresh homemade pasta that is fast, easy, and with almost no cleanup. THe main points are:

1 egg per serving
2 parts egg
3 parts flour

Put an empty mixing bowl on the scale, and zero the scale – meaning that with the empty mixing bowl on it the scale reads zero grams. Crack the egg(s) and put them in the bowl. Whisk to combine the egg whites and yolks. Whatever the weight of the eggs, multiple that by 1.5 and add that much flour.

If the egg weighs 56 grams

1.5 X 56 grams = 84 grams. That’s how much flour you want.

Add flour to the bowl until the scale reads 140 grams (56 grams for the eggs plus 84 grams for the flour.

Use a scraper ot other utensil to gently combine the eg and flour in the mixing bowl.

Once they are combined, turn the dough out onto the counter and gently finish it using your fingertips.Form the dough into a rectangle approximately the width of the pasta machine.
