Mother’s Day Dinner
I know I’m late publishing this but with getting my house ready to put on the market, the place has been Chaos Manor.
It was a smaller gathering this year, just my Mother and Father here (in addition to my Sweet Lady Wife and my son). I prepared Chicken and Mushroom Crepes with a Sherry Cream Sauce accompanied by Molly’s Cream Braised Brussels Sprouts.
Dessert was Strawberry-Banana Dessert Crepes.
Meals like this are really pretty easy. I make the crepes up several hours ahead of time. I grill the chicken breasts at the same time and then cut them up. When dinner time arrives all I have to do is make the filling, spoon some into each crepe, roll them up and reheat by sauteing in butter for a minute or two.
One of the tricky bits is getting underneath the crepe when it is in the pan and after some experimentation, I found that this silicon spatula does the best job of anything I’ve tried.
