Demi Glace
Demi-Glace is is rich brown sauce that is usually used as a base for other sauces.
Demi Glace is normally created by starting with a high quality beef for veal stock and reducing it by approximately half. Making demi-glace is a time-consuming and expensive process. For those of us who use a cup or two of demi-glace occasionally, here are the choices I use and recommend:
Demi Glace Gold
Demi Glace Gold is available at some high-end supermarkets. It is also available at Amazon.com. Demi Glace Gold is a concentrate and is mixed 4-1 (1 part Demi Glace Gold and 4 parts water) to use. It is available in two sizes:
- 1.5oz which is perfect for a single use.
- 16oz, which is much more economical when you use it frequently.
One reason that I like Demi-Glace Gold is that it does not need to be refrigerated until it’s opened.
Stock Options Beef Demi -Glace, Veal Demi Glace
Stock Options offers both a veal demi-glace and a beef demi-glace. I’d prefer using the veal, but the only place I can get it locally is Whole Foods and they carry only the beef demi-glace.
